This basic recipe for making the juice calls for carrots, lemon juice, an apple and water. Once you have the ingredients in place, just follow these simple steps below.

  • 6 cups of chopped carrots
  • 4 cups of water
  • 1 Fuji or Gala apple
  • 3 tablespoons of lemon juice

Directions

Scrub and trim carrots and chop carrots 

Clean, core and cut apple into into strips

Place  3 cups of chopped carrots in blender

Add 2 cups of water and puree

Strain into a large bowl. (You can squeeze through cheesecloth to extract liquid)

Pour the remaining carrot chucks into the blender

Add apple pieces and 2 cups of water and puree

Strain this into the bowl as well

Add lemon juice

Pour into a sealed container and refrigerate

Variations.  This is a basic vegan carrot juice recipe. You can add a teaspoon of powdered ginger to make a carrot apple ginger juice.

You may also add half a teaspoon of turmeric to make carrot turmeric juice.

For a sweeter juice you may use some honey to sweeten it to your desired taste.

The juice should last up to 5 days in the refrigerator.

Creamy Jamaican Carrot Juice Recipe

This Jamaican carrot juice recipe is very versatile. Therefore feel free to experiment with your own ingredients.

You will need the following core ingredients to make the juice.

  • 6 cups of chopped carrots
  • 4 cups of water
  • 7oz. Evaporated milk
  • 7oz. Coconut milk
  • 1 teaspoon nutmeg
  • 2 teaspoons vanilla

Directions

Wash, trim carrots and chop carrots into 1-3 inch pieces

Place 3 cups of chopped carrots in blender

Add 2 cups of water and puree

Strain into a large bowl

Add nutmeg, vanilla, coconut milk and evaporated milk

Variations. Common Jamaican practice is to add one beetroot to the ingredients to make a carrot beetroot juice. Simply prepare the beet the same way you do the carrots. 

It is also easy to transform this into a mildly alcoholic drink by adding a Guinness or Dragon stout to the juice before serving.

Tip:  Although most recipes call for sweetened condensed milk, by substituting that with coconut milk and/or evaporated milk, you will reduce the sugar content by over 30 percent.

Juice should last up to 3 days in the refrigerator.
